Cocktails: Champagne with Citrus Popsicles

Some things must be appreciated in their original state, but there's no denying that brainstorming the various ways to reinvent a classic is much too fun to completely forgo. In this recipe, we take the definitive French 75 and add an interesting twist. The citrus element of the cocktail comes in the form of an intensely flavored popsicle. Light, effervescent, and refreshing, our variation on the libation easily reminds us of the best summer cocktails we've had. 

Champagne with Citrus Popsicles

Yield: 8 popsicles
Time: 1 hour and 35 minutes (5 min prep / 1 hr 30 min freezing)


Ingredients:

  • 12 oz. champagne
  • ⅓ cup gin
  • ¼ cup simple syrup
  • ⅓ cup lemon juice

Procedure:

  1. Combine all the ingredients except for the champage and pour into popsicle molds and leave about ¼ of an inch allowance.
  2. Freeze for about 1 hour and 30 minutes or until solid.
  3. Serve popsicles inside a glass and pour champagne over.

Smoothie Sunday: Chocolate Peanut Butter Cream

Smoothie Sunday is a Tablecrafter series on creating flavorful blended beverages.


Try our take on this chocolate and peanut butter smoothie made from tablea de cacao. These chocolate tablets made from ground cocoa beans enjoy a gritty texture and hints of bitterness that add an earthy flavor to the peanut butter. If you can't find tablea de cacao at the grocery aisle, dark chocolate works great as an alternative.

Chocolate, an admittedly complex ingredient, can have flavors ranging from tart to fruity. When roasted, nutty notes shine through and complements the peanuts' flavors. This popular pairing is our main inspiration for this quick and easy smoothie.

Chocolate Peanut Butter Smoothie

Yield: 2 servings
Time: 20 minutes (5 for prep / 15 for cooling)


Ingredients:

  • 1 cup milk
  • 6 pieces tablea chocolate, unsweetened
  • 3 tbsp creamy peanut butter
  • ¼ cup granulated sugar
  • 1 cup ice cubes

Procedure:

  1. Cook the milk, sugar, and tablea until the chocolate is completely dissolved and thickened. Cool.
  2. Put all the ingredients into a blender and run until the mixture is completely smooth. Serve immediately.
